| Ingredients: |
1.2 litres/2 pints chicken stock 200g/7oz skinless boned chicken 1 fresh chilli/split lengthways and deseeded 7.5cm/3 inch piece lemon grass, split lengthways 3 or 4 lime leaves |
2.5cm/1 inch piece fresh ginger root, peeled and sliced 120ml/4 fl oz coconut milk 6-8 spring onions, sliced on the diagonal 1/4 tsp chilli puree, or to taste salt fresh coriander leaves, to garnish |
| Cooking Instructions: |
1) Put the stock in a pan with the chicken, chilli, lemon grass, lime leaves and ginger. Bring almost to the boil, reduce the heat, cover and simmer for 20-25 minutes, or until the chicken is cooked through and firm to the touch.
2) Remove the chicken and strain the stock. When the chicken is cool, slice thinly or shred into bite-sized pieces.
3) Return the stock to the saucepan and heat to simmering. Stir in the coconut milk and spring onions. Add the chicken and continue simmering for about 10 minutes, until the soup is heated through and the flavours have mingled.
4) Stir in the chilli puree. Season to taste with salt and if wished, add a little more chilli puree. |
| Serving Suggestions: |
| Ladle the soup into warm bowls and float a few fresh coriander leaves on the surface of the soup as a decoration before serving it. |
