Ingredients:
250g (9oz) cooked brown rice
12 dried apricots, chopped
55g (2oz) toasted almonds
1/2 bulb fennel, sliced
1 tbsp mango chutney
juice of 1 lime
4 cooked chicken breasts, diced
1 cucumber, diced
125g (4 and 1/2 oz) Greek-style yogurt
2 tbsp coriander, chopped
salt and freshly ground black pepper
Cooking Instructions:
Simple mix all of the ingredients in a large bowl and season to taste.
