| Ingredients: |
4 4 1/2 oz salmon fillets, skinned 2 beaten eggs 1 tbsp oil 1 tbsp butter 1 cucumber, peeled, seeded and sliced |
1/2 red pepper, cut into julienne 1 yellow pepper, cut into julienne seasoned flour seasoned breadcrumbs salt and pepper greated rind from 1 lemon |
| Cooking Instructions: |
1) Preheat oven to 200C/400F/Gas Mark 6. 2) Dredge fish in flour, dip in beaten egg and thoroughly coat with breadcrumbs. 3) Heat oil in a large frying pan. Add fish and cook for 2 minutes over a medium heat. Turn fish over, season and continue cooking fish for 10-12 minutes. 5) Before fish is done, place butter and vegetables in a saucepan. Add lemon rind, cover and cook for 5 minutes. |
