| Ingredients: |
1 seedless cucumber, peeled 1/2 red pepper, sliced 1 small celery stalk, sliced 1 apple, cored, peeled and sliced |
1/2 cup cooked frozen green peas 1 tsp horseradish 3 tbsp sour cream salt and pepper juice from 1 lemon |
| Cooking Instructions: |
1) Cut cucumber into 2 lengthwise and then slice. Place in a bowl and season with salt. Let stand for 15 minutes. 2) Drain cucumber and transfer to another bowl. Add red pepper, celery, apple and peas. 3) Sprinkle in lemon juice and season well with pepper. Mix in horseradish, then add sour cream and mix until evenly coated. |
| Serving Suggestions: |
| If desired, serve over shredded cabbage and decorate with fresh radishes. |
